Ingredients

2 kg pork (shoulder, cut into pieces, 130 g. without fat)
2 kg leeks (cut into 5-6 cm pieces)
1 kg celery (leaves, shoots, root)
1 large dry onion (chopped)
2 fresh onions (chopped)
100 g. olive oil
500 g. canned tomatoes
150 g. white wine
sweet red pepper
salt
pepper

Execution Instructions

Coat the meat with olive oil in a saucepan. Remove the meat and add the onions, leeks and celery and sauté them. Add the meat to the saucepan and deglaze with the wine. Let the alcohol evaporate and season with salt and pepper. Add the crushed tomatoes and simmer for about 1 ½ hours. Just before removing from the heat, add the red pepper.
