Ingredients

1 kilo of yellow rice
2 kg water or vegetable broth
300 g tomatoes (canned or fresh)
600 g white mushrooms
1 medium-sized onion
2 cloves garlic
1 green pepper
1 red pepper
basil
mint
100 g olive oil
salt
pepper

Execution Instructions

In a saucepan, sauté the onion, garlic and peppers.

Then, add the mushrooms and after a while the tomatoes.

Then, add the rice (washed) and water (or broth).

Season with salt and pepper and simmer until all the liquid has evaporated.

Remove from heat and add our herbs. Mix well.

Let it rest for 10 minutes and serve.
