DESCRIPTION

The unique recipes of the monastic cuisine have created exceptional flavors rich in nutrients.

The Fathers of Meteora offer fine dining combinations while remaining traditional at the core. Cod with greens is a recipe which offers every fragrance of the Trikalian soil though aromatic seasonal greens, combined with fish which they manage to integrate to the local flavors, although it is an offering from the sea.

INGREDIENTS

1300g salted cod (desalinated and chopped)
500g chopped local greens (sorrels, chards, nettles, spinach and dill)
3 leeks (the white part chopped in 2 – 3cm pieces)
1 bunch of chopped scallion
Olive oil
Salt
Pepper

METHOD

Add the greens, the leeks and the scallion in a pot. Cover the pot and steam them for 4-5 minutes.

Put the cooked greens on a tray and lightly salt. Put the cod on the greens skin side up.

Sprinkle pepper freely, add the olive oil and roast at 180 °C for about an hour.
