DESCRIPTION
The municipality of Trikala is an area where exceptional fungi grow, the rare white truffle being one of them. In this area, a recipe having mushrooms as the main ingredient of a wholesome and hearty meal is indispensable.
In the footpaths of Pindos, dozens of mushrooms species grow which bring out their special taste and aroma thanks to this particular monastic recipe.
INGREDIENTS
1 kg yellow rice
2 kg of water or vegetable broth
300g tomatoes (canned or fresh)
600g white mushrooms
1 medium sized onion
2 cloves of garlic
1 green pepper
1 red pepper
Basil
Spearmint
Olive oil
Salt
Pepper
METHOD
Sauté the onions, garlic and peppers in a pot. Add the mushrooms. After a while, add the tomatoes.
Then, after washing the rice, add it and pour the broth.
Add salt and pepper and let it shimmer until it dries up.
Remove from the stove and add the seasoning. Stir well.
Let it rest for 10 minutes and serve.
