Rapid free waters and the sky above caressing the mountain tops which stand monumental, offering clean breathing and fresh air to our place! There flows Aspropotamos and in its cool and crystal clear waters lives the Trout, the fish of the clean rivers. Fishing is difficult and after so much effort, cooking has to worth the effort. Nowadays, trout is available in the local marine farms which take advantage of our gushing, cool and endlessly divine rivers.
4 Aspropotamos Trouts (200 – 250g. each)
Season the trout with salt and pepper. Pass them through corn flour and fry in butter with oil (half of each). Serve with lemon and “nanes” (wild greens found at high altitudes in the area of Aspropotamos).
