DESCRIPTION

The secrets of the land of Trikala are the basic ingredients for the desserts of the region. “Melahrini” is one of them. Its name comes from its dark color thanks to the nuts. Many refer to the “melahrini” as the walnut pie of Trikala. This is a fair name thanks to its kernel, which has nuts as the main ingredient. However, its name is also part of the seduction it achieves with its syrupy taste.

The secret, of course, is the taste of the Trikalian nuts that abound throughout the semi-mountainous and mountainous regions, but also the careful combination of the rest of its ingredients.

INGREDIENTS

300g fine semolina
200g soft flour
3 tbsp. cocoa
2 tbsp. Baking powder
1 tbsp. cinnamon
¼ Cloves
3 vanillas
6 eggs
250g sugar
350g chopped walnut
100g sunflower oil
Salt

For the syrup
500 gr. sugar
600 gr. water
1 lemon (juice and rind)

The Secret of its Taste

The secret, of course, is the taste of the Trikalian nuts that abound throughout the semi-mountainous and mountainous regions of Trikala.

METHOD

In the mixer cream together the eggs with the sugar. After we have mixed the flour, cocoa, semolina, baking powder, salt and vanilla, we add them to the mixture with the eggs and gently mix them with a rubber spatula. Finally, add the chopped walnut and sunflower oil and mix.

Pour the mixture into a buttered pan and bake for 40 minutes at 170°C. Boil the ingredients for the syrup for about 5 minutes and let it become lukewarm. We slowly pour the syrup after we have cut the walnut pie into pieces.
