How much does a serving of trachanas take to get from the pot to our plate? It only takes a few minutes. A quick meal that raised generations in our area, thanks to its strong character. It helped the Greek housewife and mother to cook something fast and nutritious for the family. Its warmth is soothing for the cold nights in the mountains and plains.
And yet, this recipe which takes a minimal time to complete, starts its preparation in the summer. Trachanas comes from a dough that is made and ground with hard work. Off-white pebbles baked in the summer sun of Trikala to offer all their nutrition in the beginning of the winter.
1lt of water
230 – 250g sour trahana
50g olive oil
Pepper or chili flakes
Put the water, the trachana, the salt and the olive oil in a saucepan. Boil over medium heat for 15 minutes, stirring constantly so that it does not stick to the pan. Serve by grating feta and pepper or chili flakes at the last minute.
Tip: We can add croutons or even finely chopped and sautéed bacon for a more intense and savory taste.
