The secrets of the Trikala land are the basic ingredients for the sweets of the region. Melachrini is one of them. Its name comes from its dark color thanks to the walnuts. Many refer to Melachrini as Trikala walnut pie. A fair name thanks to its crumb which has walnuts as an ingredient. However, its name is also part of the seduction it achieves with its syrupy taste.

The secret, of course, is the deliciousness of the Trikala walnuts that grow throughout the semi-mountainous and mountainous terrain, but also the careful combination of the remaining ingredients.

Ingredients

300 g. fine semolina
200 g. soft flour
3 tsp. cocoa
2 tsp. baking powder
1 tsp. cinnamon
¼ tsp. cloves
3 vanilla pods
6 eggs
250 g. sugar
350 g. chopped walnuts
100 g. sunflower oil
salt

For the syrup
500 g. sugar
600 g. water
1 lemon (juice and zest)

Execution Instructions

Mix the eggs with the sugar in the mixer until foamy.

After mixing the flour, cocoa, semolina, baking powder, salt and vanilla, we pour them into the egg mixture and gently mix them with a whisk.

Finally, add the chopped walnuts and sunflower oil and mix.

Pour the mixture into a buttered baking pan and bake for 40 minutes at 170 oC.

Boil the ingredients for the syrup for about 5 minutes and let it become lukewarm.

We syrup the walnut pie, after we have cut it into pieces, slowly pouring in the syrup.
